La Roche is both a return to his roots and a new beginning. It was born from a memory: that of Toulouse, of the South, of his student years, of formative encounters, and of the discreet but decisive transition from adolescence to adulthood. A city where time is shared, where people remake the world over a drink, and where they learn as much about life as they do about science.

But La Roche is not a pale imitation of the pastis of the Southeast. It is an interpretation. local, original, and sincere, conceived and developed in the Île-de-France region. Here, the plants and seeds come from our local area. Each one is macerated separately in demijohns, respecting time and the raw materials. After a month of patience, the macerations are blended, then bottled without filtration,in order to preserve all the aromatic richness and authenticity of our land.

When tasted, Pastis La Roche is straightforward, balanced, and deeply aniseed-flavored without being excessive. It tells the story of a region, a memory, and a proud artisanal approach. A pastis of conviction, made for sharing, conversation, and simple moments—the ones that often build a life.

]]> Rock Fir, « Guy de La Roche » en danois ancien, porte le nom du premier Grand Seigneur de La Roche-Guyon. Ce gin est celui de la frontière, du serment et de l’acier. Il raconte l’année 911, lorsque le chef viking Rollon scelle à Saint-Clair-sur-Epte un traité de paix avec le roi des Francs. En échange de la Normandie, il jure fidélité, reçoit la foi chrétienne, et fonde un duché destiné à défendre le royaume. La Roche-Guyon devient alors une vigie, une ligne de garde sur la Seine, face aux vents du Nord.

Élaboré comme un London Gin, Rock Fir est un gin de combat, forgé pour protéger les femmes et les hommes de notre territoire précieux. Vieilli huit mois en fût, il se pare d’une robe ambrée, patinée comme un bouclier après la bataille. Sa structure est puissante, droite, engagée.

Au cœur de la recette, la racine de Rhodalia, infusée autrefois par les guerriers vikings avant le combat, apporte une force tellurique et profonde. Le poivre de Sichuan électrise l’attaque, la sauge et le romarin évoquent les terres à défendre, tandis que la verveine trace une ligne claire, presque rituelle, entre tension et maîtrise.

Rock Fir est un gin de serment et de loyauté. Un gin de garde, né pour défendre une terre, une histoire et des valeurs. Puissant, structuré, indomptable.

]]> First gin produced at the distillery, gin is an invitation to travel, traced like a road on 18th-century maps. Inspired by the notebooks of Louis-Alexandre de La Rochefoucauld, an explorer and curious mind of the Enlightenment, this Dry Gin is a botanical exploration, precise and mineral.

The classic base of juniper, straight and crystalline, serves as the rocky foundation for the blend. It is enriched with coriander, with citrusy and airy notes, and cardamom, a traveling spice with warm, resinous notes. Together, they create a dry, structured gin that is both refined and balanced, where each botanical seems to have been harvested during a journey through mineral landscapes and distant herb gardens.

]]> Madame is a gin of light and thought, inspired by the Duchess of Enville, a major figure at the Château de La Roche-Guyon and a woman of the Enlightenment. Free-spirited and visionary, she turned the château into a place of encounters and ideas, where botanists, philosophers, and enlightened minds gathered to imagine a new France in the midst of a century of turmoil.

This Dry Gin opens with a delicate bouquet of orange blossom, apple blossom, and pear blossom from the distillery's experimental garden, like a garden awakening in spring. Hibiscus adds a vibrant and slightly tart floral touch, while cinnamon and ginger, spices from faraway lands, infuse warmth and depth, reminiscent of the intellectual exchanges and flights of fancy characteristic of the 18th century.

Elegant and structured, Madame is a gin of balance and dialogue, where botanicals become language, and where each note celebrates boldness, curiosity, and open-mindedness..
