La Roche is both a return to his roots and a new beginning. It was born from a memory: that of Toulouse, of the South, of his student years, of formative encounters, and of the discreet but decisive transition from adolescence to adulthood. A city where time is shared, where people remake the world over a drink, and where they learn as much about life as they do about science.
But La Roche is not a pale imitation of the pastis of the Southeast. It is an interpretation. local, original, and sincere, conceived and developed in the Île-de-France region. Here, the plants and seeds come from our local area. Each one is macerated separately in demijohns, respecting time and the raw materials. After a month of patience, the macerations are blended, then bottled without filtration,in order to preserve all the aromatic richness and authenticity of our land.
When tasted, Pastis La Roche is straightforward, balanced, and deeply aniseed-flavored without being excessive. It tells the story of a region, a memory, and a proud artisanal approach. A pastis of conviction, made for sharing, conversation, and simple moments—the ones that often build a life.
